Our LDAP server holds more information than Address Book displays. Is
there some way to get Address Book to show more than it currently does?

You can configure attribute mappings in Directory Utility but it is a)
badly documented and b) not particularly flexible because c) Apple's
schema is pretty crappy.

So no, not really. I would love to be proven wrong.
