Hm, don't VMware and Virtualbox already come with perfectly good and
free tools to virtualize (p2v) a physical Windows box?

Haven't yet found then in VMware (Server).

The stuff seems to exist to build images from the virtual 'bare metal'
up, not back-up and recreate what's already there on a physical box.

Though could be me not looking hard enough, would be greatful for some
pointers :-)

They're often separate downloads. Searching vmware.com found
<http://www.vmware.com/products/converter/>. In Fusion's UI, it points
you at <http://www.vmware.com/go/pc2mac>, which seems to download some
Windows .exe.

No, virtualizing an existing box is quite a common task.
