One way is to use ffmpegX, as described here:

Another way is to use D-Vision
(<http://www.objectifmac.com/dvision.php>), which is a video conversion
app but which also has an audio-only option. Once nice thing about
D-Vision is that it'll give you separate MP3s for each chapter on the
DVD, which is great for concert videos.

You can use MPEGStreamclip and point it at the VOB you want (if the
movie encompasses multiple VOBs, you'll be asked if you just want the
one or the whole movie). Then select the extraction/conversion you want
from the File menu.

Similarly, you can use ffmpegX to extract and/or convert the audio
stream.
