Why should the OS go broadcasting over the network for any connected device that might be a printer and might use a non-standard protocol? I don't specifically know about Canon, but on my HP the CUPS drivers (if that's the same as Gutenprint drivers, whih I think it is) lacked some functionality, and I had to reinstall drivers from Leopard to restore full functionality.
