I have a recurring appointment that sometimes falls on a weekend. Is there a
way to force those occasional weekend dates to reschedule to a weekday?

You can manually move those occasions to the desired day. R-click, drag
and drop, select move, Yes.

Not automatically. You'd need to move it yourself - note that this creates
an exception and too many exceptions can corrupt the appointment.
