I would be keen to create more for the quick access toolbar Would I have to go back to word 2003? HELP !!!

Yes, you will need to make the modifications in Word 2003. To see what you will need to do to get both versions to co-exist without issues, see the following page of fellow MVP Graham Mayor's website: http://www.gmayor.com/Toolbars_in_word_2007.htm However, customizing the ribbon in 2007 is really the way to go.
