When you create a spreadsheet Excel creates 3 tabs at the bottom - is it
possible to open one of the tabs and create a set of sub-tabs, ie I could
have a main tab for week one, week two etc. and the within the tab Week1
could I have 7 sub tabs for each day of the week.

No.

You can add more sheets to a workbook.

Alternative.....

In Excel 2003 you can have 7 distinct Data>Lists on a sheet.

In Excel 2007 you can have 7 distinct Insert>Tables on a sheet.

Each tab is a sheet. You cannot have sub-sheets.
