Some are added by your e-mail client when it sends your e-mail. Others are added by the mail server AFTER you have sent it (i.e., you're not in control of your e-mail anymore after the mail server accepts it). E-mail headers are NOT to be fonted or stylized. They are just plain ASCII characters so *all* e-mail clients and servers can understand them.
