For no apparent reason the name and address on my envelopes are oversized.
Also, I can't control the setting for which size envelope so I can't get the
name and address on to the stickers I have which go to a size 6 envelope.

In the Envelope & Label dialog box you should be able to edit your font size
under Options -> Envelope Options and change to a "custom size" envelope
under under
Envelope Options -> Envelope Size.
