Knuth's TeX project worked out how to create a set of hyphenation patterns for each language that defined the hyphenation rules so as to permit accurate hyphenation without having a special hyphenation dictionary. It's more likely to miss possible hyphenations than to give you an invalid one - and of course, you can build a word-based hyphenation dictionary for those words it gets wrong, and load it for all documents without any bother. So if Pages is using the public domain hyphenation algorithm that TeX was using in 1983 along with the Iforgetwhatlicencebutfree hyphenation patterns already produced for all the big-name languages, it'll be doing a good job. What's the betting that's not what Apple did?
