I want to build a connector that
can hook to a usb/ide converter for testing CD drives in the field.
Googling got me nowhere 'cause I don't know what to call it.

Hi Mike! All of the ones I have seen are generic slimline PATA
connector. They may have an adapter between the drive and the
motherboard though. I suppose there is or will be some with SATA connectors.

Laptop IDE optical drives standard IDE interface but with a different
connector (note that some laptop optical drives are now SATA instead of
IDE). You can buy adapters on E-Bay for a couple bucks (literally) that
will adapt the laptop IDE thin-line optical drives to a standard desktop
40-pin IDE connector.
