I wonder how hard it would be to write an app that just looks for Bonjour
machines, displays them as a list and launches the Screen Sharing app with
that machine as a target when doubleclicked?

Isn't that pretty much covered by the finder sidebar, sharing click on a
machine on the network and click the 'share screen' button? Saving the
password should make it a fairly one click solution
