The user interface in Office 2007 is completely different than that in 2003. There are downloadable add-ins that will allow 2003 type menus.

In 2007, you can minimize the Ribbon by: To quickly minimize the Ribbon, double-click the name of the active tab. Double-click a tab again to restore the Ribbon. Keyboard shortcut - To minimize or restore the Ribbon, press CTRL+F1. Or a bit more arkward: Click Customize Quick Access Toolbar . In the list, click Minimize the Ribbon. In 2010, Far right, next to question mark help icon - small up or down looking icon to minimize or restore.
