I want to know which is the latest available version of MATLAB and if it uses Maple or MuPAD

2010a, and it uses MuPad if you buy the Symbolic Toolbox from Mathworks.

It is also possible to buy Maple from Maplesoft and use that as the
symbolic toolbox, if that is your preference.

I have not used MuPad, but I have used Maple a fair bit, so I am not
able to make a comparison between the two.
