In Snow Leopard, I'd like to redefine the keyboard shortcut for Quick
Look from within the Finder to be cmd-escape (so that cmd-escape looks
at a file and esc closes it again. Left hand does the open/close work
while the right hand can navigate the Finder.)

I can stop cmd-esc from opening Front Row easily enough but I can't
create a new application shortcut for Quick Look because app shortcuts
require the exact menu item name and the Finder, oh so helpfully,
changes the Quick Look menu item name to include the name of the
currently selected file.

Any suggestions on the best way to overcome this?

Has Snow Leopard lost the space-bar for Quick Look?

No it hasn't - I wasn't aware of it. Why on earth specify cmd-Y in the
menu when there is a much more convenient keystroke available? Bizarre.
