I am unable to see the activities on my co-workers calendars in a Shared
Calendar Folder view. I assume since they sent me invitations to share their
calendars, that I would automatically have permissions to see their public
activities. They can see my activities just fine.

We are all using Outlook 2007 with Exchange Server 2007.

Any thoughts?

If they gave you permission to view the activities, yes. If you only have
Free/busy permissions you can only see it on the Scheduling tab of a meeting
request or in a Group Schedule, not on the calendar.
