Although I used to download pdf documents using Safari, I preferred
saving those documents and then using Adobe Reader to read them. Now I
find that Preview can open those documents and display page thumbnails
in a sidebar. On the other hand, I no longer seem to be able to display
thumbnails using Adobe Reader. I cannot find a Reader preference item
covering sidebars or a Reader help item on this subject.

Am I missing something?

I don't think I have the latest version of Adobe Reader (9.1.3), but I
seem to have the sidebar option on the left side. By clicking on the
document icon on the left, the column expands to show thumbnails of the
pages.

I have what I believe to be the latest version of Adobe Reader, 9.3.2.
To me it is full of awkward surprises.

I opened up a multipage pdf document. Its icon was that of a spiral
bound notebook. There is no trouble using the Page Up and Page down keys
to jump a page at a time. The sidebar capability is nowhere to be seen.
The View menu has an item in it call Navigation Panels. Pressing on that
opens up a submenu. One of the items there is Pages. Pressing on that
opens up a window that contains thumbnails of the individual pages.
Clicking on these thumbnails changes the page displayed in the main
window. This must be what replaces the page sidebar.

I have not yet fiddled around trying to convert multiple single page pdf
files into a single multiple page pdf file. That is next on my agenda.

I find this to be non-intuitive. I have some visual difficulties. I
recently purchased their Photoshop Elements. Both Reader and Elements
seem to be, inadvertently I hope, difficult for me to read easily. For
reading text, I ordinarily change my screen to display inverse video.
This greatly reduces glare. Adobe seems to like using broad expanses of
white along with broad expanses of black. Whether I use direct of
inverse video, I get glare.
