How can I start numbering the third page with 1? It is somehow only possible
to start on the second page as I see it..

Insert a section break after page 2 and insert the page number in the
section 2 footer, restart the numbering there from 1.
For a simple document you could use a field construction in the footer and
avoid the need for section breaks e.g.

{ IF { Page } > 2 { ={ Page } - 2 } }

Insert a section break at the end of page 2. Unlink the header (or footer, if
you want the page number in the footer). Insert the page numbers. For more,
