Because of a peculiar interaction between the EXIF "Orientation" info,
and how Preview and iPhoto deal with it (this is, obviously, on a Mac),
I'd like to tell my camera (a Panasonic DMC-LZ5), not to set the
Orientation value, but to always leave it at "1".

Is there some way to do that?

Not AFAIK. You'll either need a less-sophisticated camera, or perhaps a
camera that supports CHDK. Another option would be to use software to
strip out the EXIF data you don't want.

Buying a dSLR doesn't make you a photographer,
it makes you a dSLR owner.

Read the manual:

http://www.retrevo.com/pdf/203bh233/66/To+display+the+picture+rotated#q=P
anasonic+DMC-LZ5

Page 71

1.Press V to select [ON] and then press [MENU/SET].
The pictures are displayed without being rotated when you select [OFF].

Refer to P33 for information about how to play back pictures.

2. Press [MENU/SET] to close the menu

I did that; it doesn't work. Or more correctly, it does precisely what
it says: "The pictures are displayed without being rotated". It does not
change the EXIF entry (which is what I want), it just prevents the
*camera* from honoring it.

Some Windows software also has "peculiar intractions" with the exif
orientation info (first and foremost, the Picture and Fax viewer), and I
just carefully avoid to use these on my photographs.

If I were you, I'd not remove the flag in-camera. You'll always find
software to remove it later, but no software to put i back.
