Yes. Mail is a normal IMAP client.

I started using imap for gmail under mail and cannot seem to get the junk
mail filtering to work. It does not mark gmail spam as read.

You can create local folders and folders on the server. The latter get
synced.

There's a checkbox in preferences for whether to store sent mail on the
server.
