Go to Office button > Word Options > Customize. Select the category of All
Commands. Select the Lock command, and click the Add button in the middle of
the dialog. Click OK.

The Lock icon will now appear on the Quick Access Toolbar.

On the Review tab, click Protect Document to show the Restrict Formatting
and Editing pane, and then click Stop Protection.

If you are going to make much use of protected forms in Word 2007 it will
help to add the old forms tools to the ribbon - that has been done for you
