I am trying to type an essay, but when I use any types of punctuation such as
an apostrophe or even quotation marks, one or two extra spaces are added
following these type of punctuations. How do I fix this formatting problem?

This is usually an indication of a Windows regional setting error relating
to the keyboard language. Ensure that your input language settings match
what you are actually using.
