I got lots of logs under both folders and back to 2008. Can I delete
anything older than for example 3 months? Do I have to delete manually or
using a script? Is there a setting in the gui to keep the logs for xx days?

Once the log files are created Exchange doesn't use them. You can
remove (or keep) whatever you like.

There's no GUI so you'll have to do it manually or write (or find) a
smal script to keep them trimmed.

can the smtp logs be used for tracking? I mean a gui to read those logs
and present the result in a good format? In ESM or 3rd party? I know you
can open each log in Notepad.
which logs Message Tracking Center uses, the log defined under server
properties?

Tracking what? The SMTP logs are records of the interaction between
the SMTP client and the SMTP server. They won't help you with knowing
if/when a message was delivered to a mailbox.

None that I know of. The Exchange 2003 (and Windows) SMTP logs make it
damned near impossible to follow anything since there's nothing that
identifies what session a particular row belongs to.

Yes. The message tracking logs. And those are no good to know what the
SMTP client and server said to each other. :-)
