I would like to change the overall color of weekend days in the calendar views.

For example, Mon thru Fri could be the default blue color but Sat & Sun
would be a red color.

Or work days would be one color and non-work days a different color.

Is there a way to accomplish this?

Perhaps, when using Outlook 2007. Assign the blue category to an all-day
event every Saturday and the red category to an all-day event every Sunday.

You could create all day events with color categories and set them to Show
time as Busy to color the dates. Otherwise, no.
