A color map is simply an N x 3 matrix of RGB values, each of which is double precision and in the range 0 to 1. The system supplied colormaps such as jet and rainbow are functions that take an optional size argument and return a color array of the appropriate size. There is nothing at all special about them: they are just simple routines that return arrays.
