The only thing I can think to try now is to move the ~/Library/Calendars
folder to your desktop (again, with iCal closed) and see if that fixes
it. It *won't* get your calendars back but it might stop iCal going
bonkers.

I'm still inclined to check that the helper plist is there. I know Jay
looked, but it is easily missed. Do this:

ls -l ~/Library/Preferences/com.apple.iCal*

Open up Terminal.app (it's in Applications/Utilities). You'll get a
command line screen. Type

ls -l ~/Library/Preferences/com.apple.iCal*

and press return. Let us know what it says.
