How is it possible to make a folder that whenever I make a new document in
that folder it will by defaut be a different template to normal

Create a shortcut that starts Word and that includes the /t switch followed by the full path to the template that you want to use. For example:

"C:\Program Files\Microsoft Office\Office12\winword" /t"c:\documents and settings\stefan\application data\microsoft\templates\templatename.dot"

Note that the path follows immediately after /t (that is, no space should be added).

Correction: The file extension for winword is of course .exe: winword.exe.
