I would like to insert IPA fonts into figures. I assume it would be via specifying the LaTeX interpreter in a way similar to switching between text and math modes.

Is there some way to include the IPA (or other) font library. There have been at least two previous posts on the issue, but no apparent resolution. Here are the previous posts:

In the thread in the second post, there is a suggestion to post-process a figure and overlay another (alpha-channelled) image or bit of text. This is clumsy, inconvenient, and unreliable compared to resolving the problem internally to Matlab.
