Hi,

Whenever i use the finders .. file > secure empty trash... it is very
slow, I assume because it is over writing the data 7 times. Can i
change the settings so .. file > secure empty trash.. only passes over
the data 1 times?

Try this in Terminal:

defaults write com.apple.finder _FXSecureEmptyTrashLevel 9
killall Finder

Could you elaborate more on what you wrote?
I found nothing on google about _FXSecureEmptyTrashLevel
