running windows 2003 sp2 and exchange 2003 sp2. Want to stop read receipt
going outside our org. Can I just go to Global settings>Internet message
formats, right click on Default, Advanced. Uncheck "Allow delivery reports".

No, you can't. A "read receipt" is just a message sent by the client.
A "delivery report" is a message with specific requirements sent by
the MTA.
