I am trying to add an appendix (text) after the footnotes of my document and
Word will not let me. Does anyone have any advise or recommendations?

Assuming that you are referring to endnotes rather than footnotes, the trick is to set placement of endnotes to "End of section" and then suppress their display for all sections but the one where you actually want them shown.
