Does it do the same thing if you send through Outlook web? Reason I am
asking is Outlook has an autocomplete cache they may be coming into the mix.
Outlook may have cached the exchange mailbox for the old persons mailbox
before you deleted it and re-added it. Have seen the issue here on certain
things. Clear the name from the autocomplete cache, and have them select the
person from the address book, or type the full address manually and it will
work.

Problem appears to be resolved after "disconnected" mailbox removal.
