Did somebody, or somebodies, sniff every closed-source version of Chrome
that's been released?

Yes, this is probably overly paranoid, and no, I'm not advocating it.
But the only way to be 100% sure would be to sniff your own version, not
rely on someone else's result.

Various entities have done it, back about 2+ years ago.
Yea, there was a bit of calling home, but it was for
confirmation of installation and update checks, but not
for what "Big Brother advocates" preach - that Google
was "spying" on folks.

Chrome does "call" in some respects, as in URL-completion
and that sort of thing - much what all browsers do.

I've read a lot of the thread and suggest that you install
a 'packet sniffer' like wireshark and see what chrome is
sending out through your interface yourself.

You don't have to be a 'guru' to do this and it is very
interesting.

Trust google? Less than I trust used car salespersons.
