Ok, don't laugh, but...

I set up an FTP server via DW (latest version). I can connect to it with no
problems, I see the files on it and everything... but... er... how do I
retrieve them locally?

How do I download them? This is embarrassing. I tried everything. The best I
could do is a right-click and an "open with..." but no "download" or "save
as".

Thanks.

Set the site up with the "FTP" option, not the "FTP/RDS" option.

Actually the way you have set the site up, there is NO local. You are
editing files directly on the server.

Your best bet is to do what Alan recommends and do a new site definition as
a Site, not as an FTP Site.
