Change these? They don't even exist in my settings. You have to create
them.

Why would one want to change/create these?

They are now enabled by default. They were NOT announced. Someone
complained it was relaying all the links in offline pages he had saved to
his PC.
The cure is to create the values above, set them to true.

I can map a persons personality if he saves his favorites to
desktop, and opens it in firefox. Every single link is sent to port 53
(easily filtered with wireshark), in wide-open, non encrypted format.
Save your bookmarks to bookmarks.html, and open it. With
wireshark open.

This one slows the computer down a lot. If you do a google
search, and opt for 50 results, you will be doing from 50 to 100 dns
lookups before choosing the ONE you need.
Maybe YOU lack a tin-hat ? maybe a little common sense ?

Just because I'm paranoid does not mean they are NOT after me.

I was expecting the usual Hummingbird_BareBottom_Clone.

My bookmarks are saved in places.sqlite. Why would save my bookmarks as
HTML on my desktop?

How many nanoseconds does that take?

I open about:config and alter this preference to true

browser.bookmarks.autoExportHTML

So when you close firefox, you export an bookmarks.html file
to your profile folder.
If you make that your start page, and put your favorite
bookmarks at the top, you will always start up firefox with all your
favorites one click away. As I have almost 1000 bookmarks, this is
very practical, for human-readable archival purposes too.

According to my analogx fastcache, this year I saved over 14
hours by caching DNS entries. Tiny program, easy to set up. Try it.
