Word (and Office in general) stores settings in many different places: some in the Normal.dotm template, some in the registry, some in various other templates (the Quick Access Toolbar and the Building Blocks) and other files (AutoCorrect, dictionary additions). There may also be add-ins that change various settings or behavior. Some settings are shared with other Office programs, which can reflect changes back into Word. If there are specific things you want to restore, you may be able to do it by simply renaming the Normal.dotm template and restarting Word (which causes Word to build a new one from its defaults) or by going into the Options dialog and putting the settings back to the defaults.
