A 3-disk RAID 5 is bad (3 disks +1 hot spare). I'd rearrange that to
be a 4-disk RAID 0+1 (or 10).

And "sec/write" too!

With delays that long I kinda doubt the problem is local to the one
server. It's not impossible, but those are some pretty lengthy delays
to be attributable to just memory or disk I/O.

Add:
Database ==> Instances \ Log Record Stalls/sec \ All instances
MSExchangeIS \ RPC Operations/sec
MSExchangeIS \ RPC Requests
MSExchangeIS Mailbox \ Receive Queue Size
MSExchangeIS Mailbox \ Send Queue Size
MSExchangeDSAccess Process \ LDAP Read Time \ [Store.exe &
inetinfo.exe}
MSExchangeDSAccess Process \ LDAP Search Time \ [Store.exe &
inetinfo.exe}
MSExchangeDSAccess Domain Controllers\ LDAP Read Time \ all instances
MSExchangeDSAccess Domain Controllers\ LDAP Search Time \ all
instances

Is anyone dismounting databases? Public folder or mailbox, doesn't
matter -- they're all handling messages.

Based onthis current setup, where should I have the transaction logs, temp,
and smtp queue information be written to?

NOT on the same RAID as the databases. You really only have two places
to put them, and on of them is inappropriate.

What is the ideal hardware setup for a stand alone Exchange server for <500
