Hi,

Is it normal to have over-allocations in MS-Project plans?
Is there an easy way to schedule and link a project with many
tasks in only 1 resource?

It is very common. If you have a single resource and all tasks are linked
with finish to start dependencies, then you will not have overallocation. If
you use the leveling feature then you can resolve some overallocation
issues.
