Mail � Preferences � Viewing � Message threading Adjust colour to taste. I thought that color was referring to the text colour of the quoted text... not the colour of the thread in the message listing window ? H

Yep. It pays to be a bit experimental with pref dialogs. They have to be terse in the extreme. It is easy to miss something obvious. I tripped myself up when the colour changed immediately but the checkbox unticking had no immediate effect.
