A quick question - when you delete the emails in Mail's trash folder, is
it possible to also delete them on the server at that point (or at least
on next mail check) without deleting other older messages still on the
server?

What's the server - POP won't (depends on whether you delete on
download or not), while IMAP and Exchange sync your deletes so they
should hold the same as you see in Mail at your end.

My two main mail servers are both POP - but when I used Eudora I was
able to delete the trash and then I think it deleted all deleted
messages on the POP servers when mail was next checked. This is useful
when you have two machines you pick up mail on as then the second one
doesn't get a lot of spam that then has to be deleted again.

Mail behaves as per the settings in Prefs/Accounts/your pop
accounts/Mailbox Behaviours, and also in Advanced/Remove copy from
server.

This for POP3? In which case it's a standard feature of Eudora (which I
use) so I imagine it's built in to the POP3 protocol, and must be
settable in Mail's prefs, as it is in Eudora's.
