All of a sudden when I type the font is red (not black like I have enabled)
with a line under. What did I hit and how do I turn it off?

It sounds as if you turned track changes on. The normal shortcut to turn it
on/off is CTRL+SHIFT+E. You probably pressed it by accident. You can also
use the button on the "Review" tab.

I believe you have enabled Track Changes. Press Ctrl+Shift+E to turn it off
(acts as a toggle, so you have probably pressed the key combination by
mistake). Then select and right-click the underlined text and choose to
Accept Change from the context menu.
