While I'm here, is shutting the MacBook down a bad idea? Is it safer to just let it sleep unless software updates demand a reboot?

Shutting down your MacBook is fine, unless you do it a lot, it should be OK

Only if you're not going to be using it for a while, otherwise it would be best to just sleep it.
