I have a Windows Server 2003 R2 with SP2 and the latest patches. I've just
added a Windows 7 Pro PC in the network. There is no option to add
(additional) drivers for Windows Vista or Windows 7.

How can I get this PC to print to server 2003 shared printer? Is this even
possible?

Yes. Since the Server OS is older, there is no UI for the new OS. You can
use a Windows 7 machine to add Windows 7 drivers to the Server 2003 machine.
