SBS2008 server, want to archive all mail into a designated mailbox in the
same manner as SBS2003.

At the moment if I engage journalling for the mailbox database the format of
the stored messages in ther mailbox changes into a message with the original
message stored as an attachment...why does it do this ?

I'm kind of aware that a similar thing can be acheived using transport rules
but I'm wondering as to why the archiving concept has been changed ?

Is journalling better than doing this the old way ? what's the gain ?

The site where we've just engaged journalling on their SBS2008 are saying
that they really don't like the new method and want something more akin to
how it used to work.

You can use what you suggested, using a Transport Rule, or the preferred is a third party archiving solution. If you truly want it to be searchable archive, such as for discovery, and available for the users at any time, you really need to go third party. Take a look at GFI's Mail Archiving. If you want to go further, you can try Zantaz EAS.
