I need to search and replace all instances of a particular font
(Helvetica Nue) with some other font (as yet unchosen, but as similar
as possible and able to be embedded) within a Pages 09 doc.

Any way to do that?

What does Pages do when opening a doc with a missing font? If it does
sensible things, try disabling Helvetica Neue via FontBook.

Can you use Styles to help you out?

I don't think so. I thought of that and had a quick look. If every instance
of Helvetica Neu is in the same character style, then yes, but if not I don't
think there's any way to do it other than what Chris suggested.

....which unfortunately FontBook won't let me do - it won't let me
disable it for some reason.
