remember books (which is free) can aparently read PDFs too now. Not sure
how well it does, I use Good Reader.

Open and edit, or open, edit and save?

Pages can't save as anything other than Pages document.
If you need to edit and save word documents you would probably need
something like Documents to go.

I have both. I use documents to go to share documents with others, I use
pages to edit my own stuff. Pages is much better, but doesn't play well
with others.
Same with numbers, I *really* like numbers on the iPad, but its not
excel, if that is what you need

iBook reads PDFs fine.

Should be fine for that - there're 2 or 3 people at my current clients
who do this and they're happy with it. Using it as a replacement for
paper copies of minutes & agenda in meetings has worked well for me,
as does taking the register in my coaching sessions (as a bonus, the
kids come up and go "is that an iPad?" instead of my having to go look
for them),
