Is this just an undreamed-of feature on which I should write to the maker of
every app? Or is there something that can be done about it?

(Consider running a specialized editor, like the one in TeXShop, and having
to enter every single command in LaTeX as a special-case, really-it's-ok
entry so the text isn't a heap of red worms. Ick. Or else, turn off the
feature every single time you open anything in the editor. Idiocy.)

You can turn it off in many apps and once that is done it is done
forever for those apps. There may be other apps that do not have
this feature. Have you got a list of them?
