/etc/cron.daily/apt can do a (apt-get update) and (apt-get -d dist-upgrade)
daily for you if you'll set "APT::Periodic::Update-Package-Lists" and
"APT::Periodic::Download-Upgradeable-Packages" in your /etc/apt/apt.conf(.d).

You can set when /etc/cron.daily is processed in /etc/crontab.

Have you ever thought about apticron? It finds updates and downloads
them for you, but leaves the final updating to you.

I've used a cron job doing "aptitude -dy full-upgrade" at night to do this in
similar circumstances.
