I suggest you file a problem report with the developers.

I had the same problem with Chicken of the VNC and a Swiss keyboard. It
was so irritating that I found another way of working which didn't
involve CotVNC.

it seems that developers have left cotvnc alone, no developer has
replied to problem reports posted on the sourceforge site for years,
hence the idea of writing here

X forwarding? on my adsl connection it is unbearable... what else?

Numerous other VNC clients are available, such as JollysFastVNC, and
indeed the ScreenSharing.app that's been built into OS X since 10.5. One
of those may do a better job.
