In trying to enter a symbol using "Alt+Ctrl+num" my "symbol" option lhas
disappeared.
1. How do I get it back?
2. What is the "num" part of the key instructions?

See http://sbarnhill.mvps.org/WordFAQs/LostSymbol.htm for the answer
to both questions.

Note that "Alt+Ctrl+num" is an incomplete description, and even when
you make it complete (the "num" part should be "the minus key on the
number pad", often abbreviated as "Num-") it's only the shortcut for
an em dash.
